An Elegant Vegitarian Menu

This was the first food photograph I had clicked. We were in Pune. I wanted to cook something different for my husband. This is how it turned out. Yummy. Right?


A veg biryani with paneer tikkas and salad. It didnt take a lot of time to cook and my husband loved it. Here is the recipe for veg biryani

Pohe

Pohe is one of the beloved and healthy breakfasts in Maharashtra. It is loved to such an extent that it is the only dish served when prospective grooms visit a girl's home.
Ingredients
  1. Thick Pohe - 1 cup
  2. Chopped Onion - 1 medium
  3. Chopped Green chili - 3
  4. Coriander - Finely chopped
  5. Turmeric - 1/2 tsp
  6. Cumin seeds - 1/2 tsp
  7. Mustard seeds - 1/2 tsp
  8. Curry leaves - 4-5
  9. Salt - to taste
  10. Sugar - 1/4 tsp
  11. Oil - 4 tsp
  12. Potato - 1 medium (Optional)
  13. Peanuts - 10-12 (Optional)
  14. Grated Coconut - 4 tsp (Optional)
Recipe
  1. Peel and cut the potato in small cubes
  2. Soak pohe in cold water for 10 seconds. Then drain all the water.
  3. Heat oil in a wide, thick pan.
  4. Add cumin, mustard seeds.
  5. Add onion, green chili and curry leaves
  6. Add potato and peanuts.
  7. Lower the flame and cook covered for 2 minutes
  8. Once the potato is turned soft, add turmeric powder
  9. Add the soaked pohe, sugar and salt.
  10. Mix carefully, add a little oil if it becomes too dry.
  11. Cook covered for another 3-4 minutes on medium flame.
  12. Decorate the dish with Shev(Indian snack), grated coconut, coriander and a piece of lemon.
If you don't put potato, there is no need to cook it covered. Add turmeric powder and pohe right after the onion turns soft and light brown.
