Kothimbir Wadi

Ingredient:

  1. Green Coriander – 2 Cups
  2. Gram Flour (Besan) – 1
  3. Cup Ginger Garlic past – 1 tbsp
  4. Red chili powder – 1 tbsp
  5. Turmeric powder - ½ tbsp
  6. Lemon Juice - 1 tbsp
  7. Sugar/Jaggery – 1 tbsp
  8. Oil – 1 Cup
  9. Salt – to taste

Procedure:

  1. Finely chop the coriander.
  2. In a bowl mix the gram flour and all the spices.
  3. Then mix it with 2 tbsp oil, coriander and lemon juice to form a dough.
  4. Divide the dough into four equal parts to form elongated rolls.
  5. Steam the rolls for 15 minutes (you can use the idali steamer for it)
  6. Make sure they are cooked by inserting a fork at the center. If it comes out clean, it’s time to fry the wadi.
  7. Keep the rolls aside for some time so that they cool down to room temperature.
  8. Slice the rolls using a very sharp knife. (You may apply little oil to knife before cutting the rolls)
  9. Heat oil in a pan and fry the sliced wadi.
  10. Garnish with chat masala and serve with tomato ketchup or chutney of your choice.
